Lauren Conrad loves her braids! She does a really good job demonstrating the fishtail braid. You can either do it to the side or straight back. Its easy to do once you get the hang of it. You have to have long hair (probably about chest length, or longer) for it to turn out well. I haven't tried it in a while, but I suggest doing it dry so it has a loose, messy look.
